With an appropriately spicy origin story involving a scorned lover and a plate of devilishly hot \u201crevenge\u201d chicken, one that inspired unexpected pleasure over pain, the country\u2019s OG hot chicken shack opened on Jefferson Street in Nashville in 1945. Eighty years later, a lot has changed in Music City, but Prince\u2019s is still slinging batch after batch of fiery fried chicken. \u201cWe\u2019re always working to stay current\u2014to see the change and adapt while staying true to who we are as a family,\u201d says Semone Jeffries, the current owner and daughter of longtime proprietor Andr\u00e9 Prince Jeffries.<\/p>\n\n\n\n<p>Today the family\u2019s cayenne-crusted birds come in eight heat levels, from plain to XXX-Hot, and devoted fans don\u2019t mind waiting, sometimes hours, for the fried-to-order plates. It\u2019s this unbridled enthusiasm that allows Prince\u2019s to bridge the gap between old Nashville and new; the company recently opened outposts at the city\u2019s glitzy new soccer stadium, Geodis Park, and the Nashville airport, and it\u2019s also planning a return to its roots. \u201cOur next project takes us back to where it all started\u2014to Jefferson Street, the root of Black business and Black culture in Nashville,\u201d Jeffries says.<\/p>\n\n\n\n<p><strong>G&amp;G tip: <\/strong>Proceed with caution, first-timers. \u201cWe always recommend starting with mild,\u201d Jeffries says. \u201cIf someone insists that they can take the heat, we advise ordering medium.
